The most common food in Pájara is fish, which is normally served with local sauces and tasty flavorings.
Fuerteventura, including all its towns, is known for its ancient delicacy known as gofio amasado. This dish is made from a mixture of grain flour (gofio), potatoes, broth, milk, water, wine and honey. It is then served in a zurron or a fabric bag.
Another specialty is the papas arrugadas - unpeeled potatoes steamed with a mixture of salt. It is steamed until the skin wrinkles and served with mojo sauce - a local hot sauce.
Fish dishes in Pájara include Sea bass, Cazon con mojo, Parrot fish or vieja, Sea bream, Tuna fish, Sword fish and Shark - which are mostly salted and poached and served with cooked vegetables.
When dining at Pájara , don t forget to taste the queso majorero - a local goat s milk cheese that is prepared in various flavors and textures. This Fuerteventura cheese is exported worldwide.
