The Gran Tarajal cuisine refers to the standard ingredients and dishes in the Canary Islands - papas arrugados, paella, tapas, gofio, mojos, local wines and cheese.
Mojo is a locally discovered sauce, which varies in color such as green, red and orange - depending on the recipe used. The typical mojo is made up of garlic, oil and vinegar. If served spicy, it is then called as Mojo Picon.
Papas arrugadas, which is wrinkled potato in English, is a potato dish. It is prepared by boiling the potatoes in salt water and is usually served with meat and mojo.
In preparing dishes, the people from Gran Tajara use various kinds of oils, which are usually prepared from scratch. They also apply colorante - a yellow food dye.
The wines available in Gran Tarajal are from the local vineyards of Fuerteventura Islands.
